Divalent -Fe, -Zn, -Cu, -Ca, and -Mg binding byrnSorghum procyanidins'(soluble and insoluble) has beenrninvestigated. Both the soluble and insoluble fractionsrnof procyanidins bound Fe. Zn, and Cu, D~t not Ca andrnMg. Binding of the cations by the insoluble procyanidinsrnhas been estimated as the difference in bindingrnbetween the Bird-Resistant (BR) and Non-Bird-Resistantrn(NBR) NDP. Binding of Fe, Zn, and CU by procyanidinsrnwas found to depend on pH, cation concentration, amountrnof fiber, fiber particle size, and presence of competingrncations. The Binding of NDF from twenty one linesrnof sorghum (16 BR and 5 NBR) was determined underrnoptimal conditions.rnn new procedure was proposed to study mineralrnbinding by soluble sorghum procyanidins based onrndialysis. Cation binding by the soluble procyanidinsrnwas determined based on tho difference in cationrnconcentration of the control and the cation solutionrnenuilibrated with the procyanidin solutio~ (afterrndialysis). The trac" element cations were bound byrnsoluble procyanidins according to the order·rnFe > Zn , Cu A chelatc structure consisting of two fivememberedrnrings has heen proposed for the cationrn(Fe, Zn, eu) - procyanidin complexes.
